A Failure at Baking Bread

I’ve never mastered the art of making bread. My yeast breads would always turn out flat, hard, or doughy in the middle. Maybe I didn’t know how to knead it properly or maybe I killed the yeast with water that was too hot. I really don’t know what the trouble was. Even bread made in a bread machine wasn’t that good, and even though my family loves fresh baked bread, I eventually it gave it up as a waste of time and ingredients, and I sold my bread machine at a yard sale. In short, baking bread intimidated me!

No-Knead 5 Minute Bread

Recently I’ve been seeing articles about a no-knead 5 minute bread recipe. It sounded so easy. It sounded like it was my kind of bread recipe. Was this a bread recipe that I could master? After this information percolated in my mind for a few months I decided to go ahead and try it. Knowing nothing about what bread dough should look like or how it should act, I just followed what the recipe said and hoped for the best.

After mixing up the dough, I put it into a big 8 quart bowl to rise. When checking on it two hours later I was very surprised to find that it had practically filled up the bowl! I shaped a loaf, let it rise again and baked my first loaf of bread with this recipe. It didn’t look great and at first seemed a little hard. I thought it was going to be another in a long string of bread baking failures.

After letting it cool for a while, I cut the first slice and it wasn’t hard like it first appeared. It was crusty like French bread! It passed the first test. Now, how would it taste? I cut slices for all of us, buttered them and handed them out. It passed the taste test too! Everyone liked it. Here’s a link to the recipe I used from the book: Bread Recipe

This recipe makes a lot of bread dough. You make up a big batch and keep it in the refrigerator for up to two weeks. When you want to bake a loaf of bread you cut off a hunk, shape it, let it rise for 40 minutes, then bake it for about a half hour. The recipe says that the flavor improves as the dough sits, so I’m hoping the next loaf will be even better.

Even with my inexperience I was able to produce a loaf of bread that was presentable and that tasted good. With more experience I think I’ll get better at it too.

The recipe I made from this book was basic French boule and it was very good. There are many variations on this recipe including pita, pizza crust, and pastries. You can make rye bread, and Italian bread as well. I’m excited that I can actually bake bread and can’t wait to expand my bread repertoire. If I can do this, you can do it too!

  1. That’s one of my very favorite cook books. I got it after Mother Earth News ran an article on them and I tried the recipe from the magazine. RAN out to my local Barnes & Noble to get the book. It’s getting a little stained and raggedy, but I enjoy making their recipes!

  4. My mother and grandmother made bread every week. I love it, but I suck at making it. I have tried this 5 minute bread recipe and it worked really well for me. My only wish is that bread was a diet food. hahaha
