The concept of canning is really quite simple: When food is processed in jars at extremely high temperatures for long periods of time, the heat kills all microorganisms and inactivates enzymes that would normally cause your food to spoil. The heating process also drives out air from the canning jar, creating a vacuum seal as the food cools. This prevents air, and the microorganisms it contains, from entering the jar and recontaminating the food.

There are two types of canned foods: raw pack, which is uncooked food put into jars and then processed; and hot pack. which is food that is heated before it is put into jars.

Canning preserves flavor and freshness that you simply can’t get in store-bought foods. Foods you are able to can include fruits, vegetables, nuts, meats, seafood, eggs, and more! You can use the boiling water canning method or the pressure cooker canning method.
