Chicken Dinner Recipes are generally big favorites with the family. Chicken is so versatile and chicken dinner recipes can be very easy to prepare.  The thought of coming home to a hot chicken dinner is very tantalizing and the family will look forward to it.  I depend on chicken dinner recipes to keep my family fed with nutritious meals and to add some variety to our menus.

Chicken is a nice change from the red meats, beef and pork, and I like to put it in the menu rotation on a regular basis.  We have our old standbys but there are always new chicken dinner recipes to try.

I have two chicken dinner recipes here for you to try.  These are tried and true in my family and we have these often.  I hope you like them as much as we do.

Chicken Dinner Recipes

This chicken dinner recipe is one that I depended on when I was still working outside the home because it is so easy.  All you have to do is throw together a couple of side dishes and there you go.  A green salad goes well with this, as does a green vegetable.  If you have leftovers such as macaroni and cheese this would be a good meal to serve it with.  If your family likes cottage cheese, that goes well too.  Serve a scoop of cottage cheese on a pineapple ring and top it with a cherry.

Baked Chicken Breasts

Buy enough chicken breasts to feed your family.  Consider if they will eat one or more and plan accordingly.  These should have skin and bones, NOT boneless, skinless.  Place the chicken breasts on a cookie sheet with sides.  Sprinkle them with salt and pepper, ground sage, garlic powder, and onion powder.  Bake at 400 degrees F for 50 to 60 minutes.  Puncture the chicken pieces with a fork and see if the juices run clear.  If so they are done.

King Ranch Chicken is a favorite at our house, especially when the weather gets chilly.  You can make this chicken dinner recipe as spicy as you like with the addition of jalapenos, cayenne pepper, or other hot spice.  It really warms you up!  This recipe is a variation on the traditional King Ranch Chicken recipe but it is the one we like.  That’s what makes cooking fun.  No recipe is cast in concrete.  Adapt it so your family likes it.   Of course a green salad goes very well with this.  Some recipes call for tortillas in this casserole but we like them served on the side.  If you leave the tortillas out, another alternative is to serve this over angel hair pasta.

King Ranch Chicken

Ingredients for King Ranch Chicken

1/4 cup butter
1 med green pepper, chopped
1 med onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
1 can RoTel
2 cups cubed cooked chicken
2 cups shredded cheddar cheese

How to Prepare King Ranch Chicken

Cook pepper and onion in butter.
Add soups, chicken and RoTel and mix.
Layer soup mixture and cheese into a 13″ x 9″ pan.
Make sure you end up with cheese on top.
Bake 40 minutes at 325 degrees.

I like to serve this over angel hair pasta, or serve flour tortillas on the side.
You can use cheddar cheese, jack cheese, colby jack or any combination you like. You can use canned chicken.
The RoTel will add heat. If you don’t like it too spicy use mild RoTel. Both are good.
