  • 1 large bunch broccoli, chopped into 1 inch pieces
  • 1/2 cup low fat plain yogurt
  • 1 green pepper, diced
  • 1 cup shredded mild cheddar, cheddar-jack mix is also good
  • 1 tsp  mustard
  • 1/8 tsp cayenne pepper
  • 1/4 cup granulated sugar
  • 2/3 cup vinegar
  • 1/3 cup olive oil
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • pepper to taste

Easy Broccoli Casserole Recipe

  1. Preheat the oven to 400 degrees
  2. Wash and trim the broccoli.
  3. Place the broccoli in a covered pot, in a small amount of boiling water about 8-10 minutes and drain.
  4. Place the broccoli in a 1-quart casserole dish.
  5. In a large bowl, combine remaining ingredients EXCEPT the cheese and spoon over the broccoli
  6. Scatter the shredded cheese across the top evenly and bake for 10-15 minutes or until bubbly.
