Sometimes you just want a salad. A big salad. This Easy Chunky Salad Recipe will definitely satisfy the need for a big healthy salad. Most people make a salad the same way. Chop up some lettuce, a tomato, and some cucumber. Maybe a little onion and/carrots. Then they top it with their favorite dressing. Not a bad way to start a salad. Nothing wrong with a basic salad. This Easy Chunky Salad Recipe takes it a little bit farther.
As the title implies, it is a chunky salad. Chunky how? Well instead of just a bowl of lettuce with some toppings, we eliminate or greatly reduce the role of lettuce in the salad. In this writer’s opinion, lettuce is a waste of time. Lettuce has very little nutritional value and is mostly water. Unless you like romaine or spinach. Spinach makes an awesome salad, but that is another post. So essentially, you make a salad with every other vegetable you like, and forget the lettuce. This gives you a big chunky salad. Big chunks of vegetables you can stick a fork in and really enjoy.
Easy Chunky Salad Recipe Directions
Ingredients:
1 head of cauliflower
1 head of broccoli
1 large bell pepper (any color)
1 cucumber
2 tomatoes, or 1lb of cherry tomatoes
1 small onion
1 small bag of baby carrots
1 can of small pitted black olives
1 bottle of zesty Italian dressing
1 small bag of romaine or spinach (if you must)
First thing is to get a LARGE bowl. Gonna need some room.
Start by chopping up the head of Cauliflower and Broccoli to about the size of a large marble.
As you chop each veggie, add it to the large bowl.
Then slice and chop up the Bell Pepper.
Next, peel the cucumber and slice it down the middle.
Slice the cucumber into 1/4 inch slices.
Peel and chop the onion to pieces the size of a nickel.
Next add about half the bag of baby carrots.
Cut up the tomatoes to about the same size as the carrots.
Open and drain the can of olives.
Use about 2/3 of a cup of zesty Italian dressing. You don’t want to drown the flavor
Mix all veggies in the bowl until evenly dispersed. You have an Easy Chunky Salad Recipe.
