Authentic Hand Made Polish Pierogi Recipe
What are Pierogies? Most Americans don’t know what a Polish Pierogi is. In a world of individually wrapped perfect snack goodness, a treat like the Polish Pierogi gets forgotten. If you have been looking for a good recipe for some ethnic food, here it is. Pierogies can be made many different ways. As I am of Polish heritage, I choose to portray the good Polish varieties.
Mashed potatoes mixed with farmer’s cheese and fried onions is a popular filling in Poland and Ukraine. Sauerkraut, cottage cheese, or a sweet fruit filling like blueberries are also very popular in Polish Pierogies. My grandmother was Polish, and she used to make Pierogies and all kinds of other Polish dishes when I was a kid. She was an awesome cook. I hope you try this easy Polish Pierogi recipe. It’s fun to make, and even more fun with two people.
Polish Pierogi Ingredients
* 2 cups sifted flourPierogi dough:
* 1 egg
* ½ cup lukewarm water
* 1 teaspoon salt
* 2 tablespoons melted butter
Mix all ingredients with an electric dough mixer and knead lightly in the bowl.
Rest dough for one-half hour covered with a kitchen towel or plastic wrap.
Making the Polish Pierogies Can Be Tricky
After about 30 minutes, knead the dough a few times on a floured surface and roll out to 1/8-inch thickness. Cut out with a 2-1/2-inch to 3-inch wide round cookie cutter or drinking glass. (Dip cutter or glass in flour to keep dough from sticking).
Now you are ready for your Pierogi Filling. Place a teaspoon full of filling in the middle of each dough circle.
(When you become an expert, add a little more filling for a plumper pierogi). You can use potatoes, cottage cheese, or Blueberries (as shown here.)
With floured hands, fold the dough over the filling, and, starting at one end of the resulting crescent, pinch the dough together to enclose the filling.
As you pinch the dough closed, continuously work the filling into the pierogi with floured fingers. Make sure the pierogi dough is tightly sealed, or these little dumplings will come apart when boiled.
