Blackened Shrimp Tacos
Two tacos: 316 calories
Prep: 10 minutes
Cook: 10 minutes
Ingredients:
5 oz. (about 10) raw large shrimp, peeled, de-veined, tails removed
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/8 tsp. paprika
Dash each salt and black pepper
Dash cayenne pepper
Dash cumin
Two 6-inch natural corn tortillas
2 tbsp. fat-free plain Greek yogurt
1/3 cup shredded cabbage
1 lime wedge
2 tbsp. natural salsa with 90mg sodium or less per 2-tbsp. serving
1 oz. (about 2 tbsp.) chopped avocado
Directions:
1. Mix spices in a small bowl. Toss shrimp in the spices.
2. Spray your pan with cooking spray and set on medium-high.
3. Cook for 4 minutes, make sure to blacken.
4. Remove shrimp from pan. Wipe out the pan and spray again. Place each tortilla in the pan on medium heat till they are hot and lightly browned
5. Top tortillas with yogurt, cabbage, avocado and shrimp. Squeeze the lime wedge over everything.
6. Fold them over and eat!
