My Original Sandwich: New Chicken Florentine

I had a rough lunch week last week where I ended up taking turkey, plain dry turkey that is, to work on a whole wheat sandwich thin.

I did not want to have too much fat and cholesterol, so I decided to dress this sandwich. After a couple of days, I ended up with a roasted chicken sandwich called New Chicken Florentine which consists of:

  • Baby spinach
  • Roasted red peppers
  • Shredded mozzarella
  • Calamata olives
  • Tomato bruchetta
  • On whole wheat spread
  • Spread with sweet potato puree

I am now creating some off the wall sandwiches that I have not seen anywhere. Should I open a sandwich shop or stay with my day job?
