Homemade Sweet Potato Pie
Yummy!! Sweet Potato Pie. Similar in color and texture to Pumpkin Pie, but healthier and more readily available. Though recognized mostly as a Thanksgiving dish, this Sweet Potato Pie recipe can be made anytime of year for a tasty, healthy treat or after dinner dessert. Having its origins in the southern states of America, a Sweet Potato Pie recipe doesn’t have a long list of ingredients, and takes only a few minutes of prep time. So gather up a few ingredients, get the oven going and have fun making this Sweet Potato Pie recipe.
Sweet Potato Pie Recipe Directions
Prep time 30 mins. Total Time 1hr 45min.
Pie Crust
1 cup all purpose flour
1/3 cup real butter
1/4 cup of water

( or get a ready made pie crust )Pie Filling
1 1/2 – 2 cups sweet potatoes
1 1/4 cup packed brown sugar
1 cup evaporated milk
3/4 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
3 medium eggs (preferably brown)Make the Crust
Combine flour and salt in small bowl
Cut in butter with pastry blender or fork until mixture becomes crumbly.
Stir in enough water with fork just until flour is moistened.
Shape into ball and flatten slightly. Roll out ball of dough on lightly floured surface into 12-inch circle.
Place dough into 9-inch pie pan pressing firmly against bottom and sides.
Trim crust to 1/2 inch from edge of pan.
Crimp or flute edge. Set aside.
Make the Pie Filling
Peel, chop, boil and mash the potatoes.
Combine all filling ingredients except the milk and eggs in large bowl.
Beat at medium speed, scraping bowl often, until well mixed.
Reduce to low speed and add milk and eggs.
Beat until well mixed.
Make the Pie
Pre-heat oven to 350.
Pour filling into crust.
Bake for 50 to 60 minutes or until poke test comes out clean.
(Crust browning too quickly? Cover edge with 2-inch strip of foil.)
Cool completely. Garnish with whipped cream, if desired.
Store refrigerated
